Casserole Sundaze!

Just your typical lazy Sunday here in Antigua.. Woke up at 5:15 am to do my business (we all have to use the bathroom in the wee hours of the morning, don't even front!) then decided to scroll through social media to see what I missed during my sleep, didn't miss much, my Timeline was full of the Kardashians at Kris's 60th Bday (why the bleep do I even follow them anyway?) *contemplates my life choices* .. Ugh, enough of Instagram! I signed out then went into my whatsapp to see who's online at 5:15 AM! Only person I see on is a friend of mine in the UK, I hit him up and we speak for about 30 mins before I fall asleep again..

Ahhh, blissful sleep.. *RINNGG!!!* I'm jolted awake again at 7:30, this time by my mother calling me from overseas.. "Hello" I slur the words .. "Samantha! You're still sleeping?! Wake up! Go feed the animals!" she yells from the other end.. "Ahmmhmm.. yea. Bye" I replied .. She laughs "See you!" *clicks* I hang up the phone and go back to sleep..

When I finally decide to get up out of bed it's after 9. I take a shower, dish out food for the pets, make myself a bun and cheese sandwich, then go online with the girls in our whatsapp group! I have one pack of Ground Turkey left, and I'm feeling the urge to cook today! What should I do with it? Stuffed Peppers again? Nahh! Did that last weekend.. So I ask the girls. Adrienne suggests meatballs, but I think that's gonna be too much work. I thank her for the suggestion anyway.. I decide to check out Youtube and see what ideas are on there. I find a video with a woman making a homemade casserole. Bingo! That's it!!

I get my bag and keys, head to the jeep and drive to the supermarket to get the other ingredients I don't have at home. Thankfully, the store wasn't as packed as it usually is on Sundays, so I'm in and out in no time! .. I get back home a start prepping my meal. Pasta, corn, broccoli and carrots out the way, I move on to the main dish, my Casserole! I prep my onions, garlic, sweet peppers and parsley then add them to the frying pan with my ground turkey. I get that going then add a cup of milk to thicken everything in.. Between cooking, chatting to the girls in the group chat and watching 300 on AMC (Yes, I can multitask!) I'm finished in no time!!
